1 lb boneless, skinless turkey (or chicken) breast
1 cup rice
1 can 98% Fat Free Cream of Chicken soup
1 can 100% Fat Free Chicken Broth
1 Packet fat-free Ranch Seasoning
Preheat oven to 375 degrees. In a medium to large baking dish, combine the soup and half the broth until smooth. Add the Ranch seasoning. Use 2 packets if you want a stronger ranch flavor. Add the rice and stir, slowly adding the rest of the broth. Then add the turkey. You may either cut the turkey into pieces and stir into the rice or place the breasts on top of the rice. You may sprinkle some extra ranch seasoning on top for extra flavor. Bake in the oven for approximately 40 minutes or until the rice is thoroughly cooked. NOTE: Serving size is based on 4 oz of turkey and 1/2 cup of rice. Goes great with salad or other green vegetables like green beans. A good way to get rid of leftover turkey.
