Besides looking and tasting good, this layered salad contains over 50% of the U.S. RDA for Vitamin A!
2 small or 1 large packages sugar-free orange or lemon flavor gelatin dessert
2 cups boiling water
1 container (8 oz.) plain nonfat yogurt
1/4 cup cold water
1 can (8 oz.) crushed pineapple in juice, undrained
1 cup shredded carrots.
1. Dissolve gelatin in boiling water. Measure 1 cup gelatin into mixing bowl; chill until slightly thickened. Stir in yogurt. Pour into clear serving bowl; chill until set but not firm.
2. Add cold water to remaining gelatin. Stir in pineapple and carrots. Chill until slightly thickened. Spoon over gelatin-yogurt mixture in bowl. Chill until firm, about 4 hours.
