2 cans (10 3/4 oz each) 98% FF condensed cream of mushroom, celery, or chicken soup
Dash each salt & pepper
4 boxes (10 oz each) frozen French-style green beans, thawed
1 large can sliced mushrooms, drained
1 small can sliced water chestnuts, drained
1/2 cup roasted red peppers, sliced
4 oz baked low-fat potato chips, coarsely crushed (or WW Cheddar Twists, 2 Points per pouch)
1. Preheat oven to 350. In large bowl combine soup, salt, and pepper. Stir in green beans, mushrooms, water chestnuts, and roasted peppers.
2. Transfer mixture to 9X13" baking dish; bake until heated through, 20-25 minutes. Stir, then sprinkle evenly with potato chips; bake 5 minutes longer. Makes 10 servings, 2 Points each
(123 calories, 2 g fat, 5 g fiber) (Adjust Points if you use WW Cheddar Twists)
CORE PLAN SUGGESTION: Omit soup & chips. Combine vegetables & 8 oz shredded fat-free Cheddar cheese in baking dish. Bake, covered, until heated through and cheese is melted, 20-25 minutes.
