Main Dish: CAJUN CABBAGE HOTDISH - Donelda, Minot Staff...she says it's not too spicey!
1 lb extra lean ground beef
1/2 head of cabbage (chopped or diced)
1 green pepper (chopped)
2 small onions (chopped)
1 rib celery (chopped)
2 14 oz cans diced or stewed tomatoes
1 1/4 cup uncooked brown rice
1 - 2 cups water
2 tsp cajun seasoning
1 tsp salt
1/2 tsp pepper

Brown beef with peppers, onions & celery. Drain excess juices if any. Add all remaining ingredients and simmer on stovetop for 20 minutes. Cover and bake at 375 for 50 minutes.

10 servings, 1 cup each - CORE or 3 Points.
Donelda added about 1/4 cup ketchup & said it's very good & filling!
