PEACH SALSA

16 CUPS CHOPPED TOMATOES

4 CUPS CHOPPED PEACHES

(FRESH, CANNED REG. OR LIGHT)

1 1/2 CUPS GREEN PEPPER CHOPPED

1 1/2 CUPS ONION CHOPPED

3 JALAPENO PEPPERS CHOPPED

6 tsp. CANNING SALT

2 TBSP CHILI PEPPERS OR

1 1/4 TBSP HOT CHILI SAUCE

1 tsp. BLACK PEPPER

9 TBSP. BROWN SUGAR

6-8 SMALL CLOVES OF GARLIC

1 CUP WHITE VINGEGAR

CORNSTARCH TO THICKEN (1/2 CUP)?

PROCESS 5 LBS PRESSURE FOR 10 MINUTES


I used 4 sweet peppers and 1 hot pepper, did not add jalapeno peppers.

Used Franks Hot Sauce for hot chili sauce.

Increased peaches to 6 to 8 cups chopped fine.

16 cups of tomates is about 10 pounds also added some orange and yellow tomatoes for color.

I am also going to try making this using pineapple and mangos.

Makes 13 pints
