Appetizers: SCALLOPED CORN - PointsPlus
I just made this & actually measured out the whole recipe but I made a double batch. I have posted the ingredients for doubling it at the bottom.

Approximately 11 servings of 1/2 C each = 5 PointsPlus per serving

32 oz canned yellow corn (I like to use frozen, it's better!)
16 oz canned cream-style yellow corn
3 beaten eggs
2 Tbsp sugar
2 cup Carnation Evaporated Milk
2 Tbsp all-purpose flour
2 Tbsp butter (melted)
10 or 12 crushed Zesta Original Crackers
Salt & pepper to taste

Mix well; bake in oven or crockpot. At least 4-6 hours on low in crockpot, In oven, about 1 1/2 hrs at 350. Be sure to grease the casserole or crockpot with butter or margarine before filling with corn mixture.

DOUBLE BATCH:

36 oz frozen corn
30 oz canned cream-style yellow corn
5 beaten eggs
4 Tbsp sugar
24 oz Carnation Evaporated Milk
4 Tbsp all-purpose flour
4 Tbsp butter (melted)
24 crushed Zesta Original Crackers
Salt & pepper to taste

Same instructions as above. 106 PointsPlus in whole recipe, approx. 22 servings of 1/2 C each at 5 PointsPlus.
