2 tubes (4 oz. ea) refrig. buttermilk biscuits (Grands Homestyle Buttermilk Biscuits)

3 cartons (8 oz. ea.) egg substitute (thawed)

7 oz. Canadian bacon (or 10 oz canned lean ham), chopped

1 C (4 oz.) shredded reduced-fat cheddar cheese

1 C (4 oz.) shredded part-skim mozzarella cheese

1/2 C chopped fresh mushroms

1/2 C finely chopped onion

1/4 tsp pepper

Arrange biscuits in 13 X 9-in baking dish coated with PAM. Combine remaining ingredients; pour over biscuits. Bake, uncovered, at 350 for 30-35 min. or until knife inserted near center comes out clean. 1 biscuit section = 1 serving.
