4 small boneless skinless chicken breasts (4 oz each)
4 tsp taco seasoning mix (you can make your own, see Homemade Taco Seasoning recipe)
1/2 lb red potatoes, peeled and thinly sliced (about 2 cups)
1/2 cup salsa
12 oz black beans
1 C 2% reduced fat Mexican shredded cheese
Serve with light sour cream but add PointsPlus values.
Preheat oven to 400. Sprinkle chicken w/ seasoning mix. Place 1/2 cup of potatoes on center of each of 4 large sheets of heavy duty foil; top evenly w/ chicken, black beans, salsa and cheese. Bring up foil sides. Double fold top and both ends to seal each packet, leaving room for heat circulation inside. Place in 15x10" baking pan. Bake 30-35 minutes until thoroughly cooked. Remove from oven and let stand 5 minutes. Serve w/ sour cream but add PointsPlus values for how much you use.
Makes 4 servings @ 8 PointsPlus each
