1 small onion, chopped
1 jar roasted red peppers, drained and chopped
1 small can diced green chiles
2 tsp cumin
1 tsp coriander
4 cups potatoes, chopped
4 cups chicken broth
4 oz 1/3 fat cream cheese
In a sauce pan, saute the onions in a tiny bit of EVOO til tender. Add chiles, peppers, cumin and corriander and simmer about 2 min. Add potatoes and broth and bring to boil. Once boiling, simmer about 10 min until potatoes are cooked. Drop cream cheese by small chunks into the soup and stir till melted.
This was a very hearty soup! You may want to crush tortilla chips on top to add some crunch.
