Approximately 12 servings of 1 Cup each, 3 PP per cup
1 1/2 pounds lean ground beef (93%) (22 PP)
1 medium onion, chopped (I used onion juice)
1 can (28 oz) diced tomatoes, undrained (I used crushed)
2 cans (14 1/2 oz each) beef broth (1 PP)
1 cup water
4 celery ribs
4 large carrots, halved & sliced
Pepper to taste
1 tsp thyme
1/2 tsp salt
1/2 cup barley (I used Quick Barley & added at the last 10 minutes) (8 PP)
1/4 cup chopped fresh parsley (I used dried, just throw about a Tbsp or so)
Brown beef with onion; drain. Stir in all remaining ingredients & bring to a boil. Reduce heat and cover. Simmer for about 45 minutes or until veggies and barley are tender. Remove from heat and add parsley. Let stand for 5 minutes.
