Salads: CARAMEL APPLE SALAD (updated) - Thanks Virginia!
4 medium apples, chopped (6 Pts)

2 oz. peanuts, coarsely chopped (I use cocktail peanuts) (8 Pts)

1 small pkg sugar free, fat free butterscotch INSTANT pudding (2 Pts) OR regular** (7 Pts)

1 (8oz) can crushed pineapple (2 Pts)

1 (8oz) tub fat free cool whip (7.5 Pts) (or Lite = 12 Pts)

Put all in a bowl and stir - keep refrigerated.

Using fat-free,sugar free butterscotch pudding & fat-free Cool Whip, the whole recipe has 27 Points - roughly 12 servings of 1/2 cup = 2 Points per 1/2 cup serving.

I don't like to use artificial sweetener so I make mine using the regular pudding along with Cool Whip Lite. If you use those 2 ingredients the whole recipe has 37 Pts, approximately 3 Pts per 1/2 cup serving.
