Appetizers: VEGETARIAN CRAB CAKES - Thanks Donelda!
2 1/2c of grated zucchini
1 sm onion (grated)
1/2 red bell pepper (minced)
1 Tbsp Old Bay Seasoning
3-4 Tbsp Wheat Flour
1 cup of Bread Crumbs
1 egg*

Mix All ingredients together and form five patties. Heat as Sautee pan with a little Olive oil (just enough so cakes wont stick) Brown patties on both sides then place in the oven until finished.

This goes great on Arnolds Sandwich Thins with slice of tomato and Lettuce. The total recipe is 14 Points with 3 Points per serving (which is 1 cake)

*omit the egg if the mixture is moist after the bread crumbs and flour is added. This can save you 2pts on the overall recipe. My first time making them I added egg and had to add more bread crumbs cuz it was too moist
