Salads: CUCUMBER TOMATO SALAD - Thanks Brenda Q.!
1/2 cup rice vineagar (or distilled white vinegar)
3 TBSP Equal Spoonful (or 4 1/2 packets Equal)
3 cups unpeeled sliced cucumbers
2 cups chopped tomato
1/2 cup chopped red onion
Salt & pepper to taste

Combine vinegar & Equal. Add cucumbers, tomato, & onion. Season to taste w/ salt & pepper, mix well. Refrigerate, covered for at least 30 minutes before serving.
Makes 6 servings (3/4 cup each) = 0 points
