16 oz canned tomato paste
1 oz fat-free hard or semi-soft cheese
1 pound(s) mushroom(s), (You can substitute canned mushrooms if needed.)
4 small zucchini, 4-5 small zucchini or 1 large one
1 large onion(s), chopped
1 1/2 pound(s) cooked Italian pork sausage, browned, drained. (you can substitute lean ground beef, just adjust points)
1 tsp Italian seasoning, or more as taste desires
2 medium green pepper(s), (you can use 2 or 3 yellow, red or green- sliced in strips)
Brown Italian Sausage (or lean ground beef). Drain and set aside.
Sauté 1 pound fresh mushrooms or canned mushrooms. Add 1 chopped onion and 4-5 small chopped zucchini.
Cooked until slightly browned. Add 2-3 yellow/red/green peppers sliced into strips.
Add 2- 8 ounce cans tomato paste. Add Italian Seasoning to taste.
Simmer until peppers are tender. Add meat and simmer 5 minutes. Add grated cheese either into the casserole, or use as a topping.
Serve and enjoy!
