Appetizers: PARMESAN ZUCCHINI STRIPS - Thanks Connie Wolf!
1/3 C seasoned bread crumbs
1/4 C no-fat Parmesan cheese topping
4 small zucchini, quartered lengthwise
Egg substitute equivalent to 1 egg (1/4 Cup)

Combine bread crumbs & cheese. Dip zucchini in egg substitute then crumbs. Place on sprayed baking sheet. Bake at 450 F for 20-25 minutes.

Yield: 4 servings, 1 Pt per serving

1 serving: 91 calories, 390 mg sodium, 2 mg chol, 14 gm carb, 7 gm protein, 1 gm fat, 3 gm fiber
