One fantastic potato salad I made I call "Stacy's 3 Potato Salad"...Stacy (South FL)
Make the night before...
Idaho,Sweet and Red skin potatoes cubed,steamed and then refrigerate overnight.
Do NOT use mayo. Try my dressing instead. This is a really easy way to enjoy Core/Simply Filling and it is so VERY good!
1:1 Fat-free Greek style yogurt/fat-free Sour Cream, 2 squirts or so French's brown mustard and stir. You'll taste it and see that this is awesome dressing for a flavorful and heart healthy potato salad that will lend itself to a lot more than you think. I add chopped onion,bell pepper and slivers of carrot.
This has been my lunch 1 category a day all week and it is such a nice change from the usual. I hope you enjoy it! ~Stacy in South FL
