WW - Weight Watchers; RF - Reduced Fat; (Calories/Fat/Fiber OR # points)

Ingredients:
1 1/3 c. WW RF Mozzarella shredded Cheese (270/16/0)
28 oz diced tomatoes (50/0/0)
5 cups of zucchini, chopped [I peel and cube this during the summer in 5 c. bags and freeze them] (1)
1/2 tsp each dried oregano, dried basil, red pepper flakes/salt (0)
1 c. cooked lentils [1/3 cup of dried lentis - cooked in 1 cup of water for ~15 minutes] (2)
1/2 c. jasmine rice (6)

* Measure out about 1/2 c. of the cheese
* Combine ingredients in a casserole dish
* Sprinkle 1/2 c. left over cheese on top
* Bake in 350F oven for 30-40 minutes

"I think I learned from Alton Brown that lentils were used in place of meat( I guess I was assuming hamburger) during war time in a lot of recipes, because they were cheaper.
Lentils appear to be 1/2 the points of 95% lean hamburger." ~Leslie B.
