Salads: FROZEN CRANBERRY SALAD - Thanks Alice N. - WW Receptionist!
This originally came from a friend of my aunt and has become one of our
holiday favorites. If the family doesn't know it's sugar & fat free, they will
never guess. It's a dessert for us & has it all - cold, crunchy, creamy,
tart and sweet!

(I am a receptionist for WW & share this with our group)

2 pkg. Jell-O, sugar free Ė mix with 2 c. hot water,
Chill until partially set. Beat until fluffy.

Add: 1 c. ground cranberries
1 c. crushed pineapple (donít drain it)
1/2 cup chopped celery
1/2 c. chopped walnuts, if desired
1 c. hot water
1 c. sugar substitute
Stir until sugar is dissolved.
Pour into dish and freeze until solid.

1/4 c. marshmallow creme
Add 1 sm. pkg. fat free cream cheese.
Mix all together, spread on top of frozen mixture.
Sprinkle a few chopped walnuts on top if desired.
Freeze until solid

Let stand 10 min. or so before serving.

This should be about 15 points for the whole batch. If you freeze it in an 8-inch or 9-inch square pan, you can get nine servings, just under 2 points each.
